Cranberry Shortbread

Last year whilst trying to avoid eating a Phillipa's mince pie every single day I worked in Armadale pre-christmas (best overpriced bakeries and cafes, dangerous, dangeous place to work) I stumbled across their cranberry shortbread and fell in love. I'm planning on making little bags of them as christmas gifts this year so I did a test run with this recipe and I think I'm in love. Next time I'll chill the dough and roll it so I can cut some simple christmas shapes but otherwise it was perfect - the melt in your mouth shortbread was really lifted by the chewy cranberry pieces - plus it makes them look pretty!

I have a rediculous amount of fresh cranberries! what is something absolutley amazing that i could make with them?

Does anyone know of a recipe for fondant that doesn't attempt to devour you?
My last attempt was a marshmallow based fondant, and while I'm not sure what went wrong, both my friend and I were nearly devoured by it.
Any tips/ ideas or what have you would be much appreciated. ^^

Chocolate Hazelnut Pie

So I know this is a weird picture. I took it out of the magazine from which I got the recipe. But I promise I really did make it, and it was really easy and, possibly, the very best chocolate pie I have ever tasted in my life. I just forgot to photograph it before it was devoured.

I have been on a pretty strict diet since June. I've lost 60 pounds, but haven't baked much. I don't really eat sweets at all now because I avoid all the fake sugar. In order to eat healthy and sustainable, I have been limited. So at Thanksgiving, I wanted to make something that was healthy, and low(ish) in sugar, but also decadent and yummy. When I found this recipe in the November issue of Health magazine, I had to try it.

70 Minute Turkey

I thought I'd share this experience since, in a time when everyone is concerned about saving energy (either to save the planet or to save money) this is a rather brilliant way to cook a turkey.

Usually we don't have turkey in my house for Thanksgiving because it's just a huge pain in the butt. Why eat a turkey that will take hours to cook when we can pop a roast in and be done in an hour? This year, though, Mom was reading M.S. Living which had an article about cooking a Spatchcocked (butterflied) Turkey. So we thought... 70 minutes, really? Let's try it!

The turkey was the last thing to go into the oven and it came out perfectly about an hour later. No need to cover it or worry the skin will burn. It was still very moist.

Cake

After a twee bit of help from the mods re: fondant coloring, I managed to do my first batch of fondant and make a cake for some friends. Sadly, it is just a plain old box mix as it's thanksgiving I got loads of other stuff that I gotta make like prime rib, but, 4 hours later after dying the darn stuff, and then putting it on, re-putting it on, twitching, and grumping at the flecks of icing sugar that I //just// can't seem to get out, I finished it.

Mind you I'm told the flecks of icing sugar make it look like stars so, that's not too bad I suppose. Yes, it's terribly made, but it's my first time, and I can only get better from here on in. I present....

blueberry pie!

So I made this blueberry pie... and I was transferring it from the oven to the broiler below, (to brown it on the top a bit more)... and it FELL.

I sat in the middle of the kitchen floor, and when my boyfriend came home, he helped scrape me and the pie off the floor, and encouraged me to try again.

Recipe Request! Too...much...cream!!!

Hi Bakers! This is my first post here. Sorry to make it a request post... Here's my dilemma: My husband came home with a pint each of whipping/heavy cream, and 1/2 and 1/2, not knowing that we have a little over 1/2 a pint of each already. Plus we have 1/2 a gallon of skim milk, and 1/4 a gallon of whole milk. It's just the 2 of us, so we won't go through all of this in our normal sauces and coffee before it goes bad. 1 pint of the cream will be used tomorrow for whipped cream on a pumpkin pie, but that still leaves the 1/2 & 1/2, milk, and half of a pint of heavy cream. I also have a couple cans of condensed milk. I need recipes that are heavy in dairy!!! Help me, PLEASE!!!

Other ingredients I have at hand:
Nearly any baking staple (including various chocolates)
1 Banana Squash (simular to pumpkin in flavor, but richer and sweeter)
1 small sugar pumpkin
2 pounds Cranberries
3 bananas
Fresh ginger root

A pretty long while ago I recommended a recipe for matcha/green tea cookies to a friend, and since then the both of us seem to have misplaced the recipe!!

I've tried going back and looking in the tags, but I just can't seem to find it. I believe they were a soft cookie, and they were quite simple and quick. If anyone remembers it, or if you have a favorite of your own, please please help a girl out??

Chocolate Chip Cookies

Okay, not a great picture but I didn't want to grab the actual camera.
cooked to perfection! 8 in first batch. 8 in second. about 4 left to do. not quite 5 dozen promised lol
Nothing special, just regular chocolate chip cookies, using the Nestle Tollhouse recipe. I did use a combo of white and milk chocolate chips, and french vanilla extract instead of plain extract. They taste good!!

I haven't really got into a video games in a while. The last one was Pokemon Pearl. But :Rosemary has me hooked on TF2.
Pyro is one of my favourite classes to play. There is just something awesome about sneaking behind someone and hitting them with the backburner, or using compressed air to reflect a rocket back at someone!

November is almost done and I have to say it's been a pretty awesome month. I got to start the month working on a project with one friend ( [info]emsariel ) and it looks like I'm ending the month working with another friend [info]yaytime. All that and I've done pretty well with illustration financially this month too. Working with friends and getting payed to draw pretty pictures, knock on wood for me.



I can't believe Thanksgiving is tomorrow! I'm so excited. I absolutely love Thanksgiving, and not just because it's my birthday. I love the decorations, the weather (although it's going to be 80 degrees in Phoenix, but it's a nice break from the summer), and being with all of my family. It's a nice way to forget about all of the stresses of my life; finishing up my last semester of college, planning my wedding, working, etc. I honestly can't express how much I love Thanksgiving. It's my favorite holiday and I look forward to it all year. I'm sure my fellow "foodies" and food bloggers feel the same way!

This is a perfect last-minute dish for Thanksgiving. My future father-in-law (Jay - check out his blog, Journey to St. Andrews) took Kramer and I to a restaurant called Liberty Market in Gilbert last weekend and Jay and I had a roasted sweet potato salad that was absolutely delicious. I loved it so much that I wanted to try making it myself at home. It's not quite the same, but it's pretty close, and I'm really happy with it! I used yams instead of sweet potatoes, and baked it with a quick sauce of maple syrup, apple cider vinegar, lemon juice, and honey, then tossed it with toasted pecans and dried cranberries, which the original salad had. This is a great vegan or vegetarian side dish that tastes fantastic served hot or cold. I hope you all have a fantastic (and safe) Thanksgiving! SO, I'm having my exams right now and I haven't even started studying for my Law of Contract paper which is in a week. However, I chanced upon Chez Pim's flaky pastry recipe http://www.seriouseats.com/2009/11/video-chez-pims-super-easy-pie-tart-dough-recipe.html this morning and the only thought that processed through my head was:

Screw law school, Oven here I come


SO YES, 8000 Calories, a very flabby me and a flaky buttery pastry oozing with apple sauce and all things good later... here's a little preview of why (for now at least) apples > contract law :)

No Kneed Bread Recipes

I'm new to bread making and I baked this no kneed bread and it was so easy and so delicious. Now, I'm trying to figure out how to adapt the recipe a little.

Can I just add spices to give it a different taste? During what part of the process would I add them? I wanted to make a three cheese bread also. Could I just add some cheese to this recipe? Would I need more yeast or other ingredients?

Thanks for any suggestions!
